Mother’s Day Banana Muffins

For your wonderful Mum

A yummy recipe of Annabel Karmel’s, to be enjoyed by all and baked by even the youngest chefs.

Ingredients

  • 1 medium egg

  • ½ tsp vanilla extract

  • 55g soft light brown sugar

  • 1 large, very ripe banana

  • 55ml sunflower oil

  • 100g plain flour (or 85g wholemeal flour)

  • ½ tsp baking powder

  • ½ tsp bicarbonate of soda

  • 1/4 tsp ground cinnamon

  • Pinch of salt

  • 12 chunks of milk chocolate

 

Method

  1. Preheat the oven to 180 degrees centigrade.

  2. Line the muffin tin with 12 muffin liners.

  3. Crack the egg into a large bowl and add the brown sugar.

  4. Add the vanilla extract and whisk together until thick.

  5. Mash the banana with a fork.

  6. Add the mashed banana and oil to the egg and sugar mixture.

  7. Sift the flour, baking powder, bicarbonate of soda, salt and cinnamon and stir together.

  8. Fill the muffin cases and then bake for 12-14 minutes until risen and firm

  9. While still hot, cut a slit into the top of each muffin and insert a single chunk of your favourite milk chocolate.
