Lemon Drizzle Cake

PREP TIME: 15 minutes
APPLIANCE: Steam Oven - Settings 160°C/30% humidity
COOKING TIME: 35-40 minutes

Ingredients
175g soft margarine
175g (golden caster sugar
3 eggs
175g self-raising flour
1 tsp baking powder
Finely grated rind of lemon
Topping
Juice of 1 lemon
100g golden caster sugar
Method
Lightly grease and baseline 20cm deep cake tin.
Preheat the combination steam oven at 160°C/30% humidity.
Place all the cake ingredients into a large bowl and beat with a wooden spoon for 2-3 minutes or with an electric mixer for 1 minute until thoroughly mixed.
Place the mixture into the prepared tin and level the surface.
Place in the combination steam oven and bake until evenly brown and well risen.
Whilst the cake is baking make the topping by blending the lemon juice and sugar in a bowl.
Turn the cake out and drizzle over the lemon mixture while still warm.
